        As Mid-Autumn Festival approaches, people are looking for their favorite mooncakes with different fillings. Some like sweet ones, while others prefer savory.
        A unique kind of mooncake — filled with mature vinegar — recently attracted followers in Taiyuan, Shanxi province.
         
        Based on traditional production processes and fillings, including different nuts and dried fruits, mature vinegar is added, which greatly improves its flavor. The vinegar removes some of the sweetness and greasy taste while leaving no sour flavor.
        In recent years, various regions have introduced innovative mooncake flavors based on their local characteristics.
         
        Luosifen, a dish of rice noodles cooked with snails, is a signature street food. Luosifen mooncakes are filled with these local ingredients offering crowds a unique festival experience.
         
        Hubei province is famous for its crayfish, so each mooncake is stuffed full with four crayfish. Varieties of this mooncake include garlic, salt and pepper, and spicy crayfish options.
         
        People in Sichuan province love hot pot so deeply, that many businesses launched hot pot mooncakes. The filling of this unique flavor mooncake is made of brown sugar, flour, and signature hot pot broth, putting a new twist on this traditionally sweet desert.
         
        Guangzhou and Shenzhen love tea and have many milk tea shops. Named "cheese pop milk tea mooncake," the mooncake is filled with milk tea ingredients, which caters to the tastes of young people.
